Weigh in Monday!!!


Last week, I forgot to post about my "small" loss of .4 lb. It was a busy week. I didn't work out but I painted Chandler's bedroom in preperation for his room make over for his 6th birthday. But I did actually work up a sweat prepping, painting and cleaning up the mess. So that worked out, counting as activity points.

This week, when I weighed in, I was prepping myself for a gain, since I've been sick and went off plan. Who knew that I'd lose, let alone lose 2.6 lb! Which that means...I've hit 11.4 lb!!!! Woo! So now I didn't just hit 10, but went past it! I didn't work out, I ate junk (read: cake, yum!), didn't track, etc.

But I am happy to be down this week, and hitting my 2nd mini goal of 10 lb. I am toying with the idea of starting up my bodybugg this week so I can see if I can be better about tracking my activity and making sure I am really not going crazy on the calories. I know it means double tracking, but I think I'll do better using the Bugg to make sure I am on my way. I am now 49.6 away from my goal that I'd like to hit June 29! That's 4 months from today; 12 lb a month. I think the Bugg will help hit that goal of 12 a month.

Weigh in Monday


Happy Valentine's day; Also known as our anniversary! 7 years ago today I married Rob. So Besides the weekly weigh in update, I am going to have a *small* trip down memory lane (so here's a time line). :)

October 1997, Rob and I met and began hanging out with a bunch of mutual friends. By April 1998 we took a trip to see Aerosmith and "officially" began dating. Since I was in Corvallis and he was in Beaverton, it wasn't too serious but still we weren't dating other people. So in 2002 we got more serious again, and we began living together. By my birthday in April 2003, 5 years after we began dating we became engaged. February 14th 2004 we were husband & wife! By March 2005, Chandler joined our family! In June 2008, Lincoln completed our family!

Now back to the real reason for my post! Last week I missed workouts (doh!) but I also skipped ice cream (even if I had points for it). We also went out for dinner, a movie & Dairy Queen on Friday to celebrate the above. I was so freaked out, eating out! Rob told me not to stress on one meal, but I talked myself away from the pizza or breaded chicken parm, and had the Chicken Marsala and ate 3/4 of it. I guessed it was about 19 pts (Olive Garden's Chicken Marsala was, so I used that to calculate the points). We went and saw The King's Speech (AMAZING), and headed to DQ. Now I could have been good, but I did have Weekly Points and Activity Points, so I threw caution to the wind and had a Waffle Bowl. Only to find out it was 21 points! Yikes.

So after that evening, I was worried this morning. But I was down 2.8, for a total of 8.4! Woo! So I am 1.6 away from 10 lb! Can you guess what my goal is for next Monday? Yep, be down at least 10 pounds!

Chicken Fingers!

Rob was at school (again, lol) and we had chicken breasts somewhat defrosted (darn sink for emptying without my knowledge). I got the chicken safely defrosted, and went to my laptop to figure out what to do with them!

So I figured I'd look at recipes online. I found one on the WW site but I am not a huge fan of mustard. After reading the reviews, someone suggested egg whites, so here's what I came up with! It was a hit with the boys, and Chandler asked to take some left overs to lunch tomorrow. We served it with rice and frozen corn.

Chicken Strips
Weight Watcher's Points plus: 4
  • 1.5 lb of chicken breast, cut into strips.
  • 3/4 C of bread crumbs
  • 1/2 C of egg white substitute
  • 5 sprays of PAM, divided
  • Italian Seasonings, Salt & Pepper to taste
Preheat oven to 450ºF. Place a large baking sheet in the oven to preheat.
In a shallow dish, pour in egg whites. Place bread crumbs with seasonings in a separate dish, mix well. Add chicken to egg whites; turn to coat. Transfer chicken to bread crumbs and turn to coat.
Remove the hot baking sheet from oven and coat with cooking spray. Place chicken on baking sheet, spray chicken with cooking spray (helps brown) and bake 6 minutes; flip and bake until golden brown and cooked through, about 6 minutes more.
A serving is approx. 3 oz, cooked, Serves 6.

Weigh in Monday

I knew today was going to be a rough day at my WW meeting: the day after Super Bowl, aka food bowl. But I wasn't going to let it get me down at all. Yes I splurged, I had a small slice of poppy seed cake (skipped the frosting) and 1/2 a chocolate cupcake (skipped frosting). So I knew it wasn't going to be too pretty. I was right, +1.6! Doh!

But on the other hand, this morning, I got up dropped Chandler at the bus, and took Lincoln to the gym to do Bodypump at 9 am, of course my meeting is at 10:45, so I think that also could be part of the reason my number was higher. At least that's what Rob said could happen.

But I am good with it, you know why? I *feel* good! I am feeling more energy, even if I am stiff and sore. Insert groan here. Ha! This morning I even bumped up my weights that I am using, and the instructor of Bodypump gave me a trick to help me with lunges (I loathe those), since I have a hard time balancing while keeping perfect form. Score.

So last week I worked out 4 days, 3 of those days were classes (Zumba and Bodypump). I will be keeping with the goal of 4 days. I need my body to be able to recover. But tonight I am going to be INSANE! I am going to hit Zumba too, daily doubles, much? Yep. I am also going to have Rob help me do my measurements. I should have done it when I started 5 weeks ago, but oh well, better late than never.

So there it is, I gained, and I am OK with it. After last week, I am surprised I feel that way. Let's hope next week will be OK since it's our 7th Anniversary and we are going out to dinner. Wish me luck!

Teriyaki Pork Stir Fry

Rob had school tonight and the boys wanted pizza (tortillia pizzas). But I needed something more. We had teriyaki pork tenderloin Monday night, so we had exactly 3 oz left over. We also had some pineapple with dinner Monday night, so we had some of that left over as well. So this is what I whipped up!


Teriyaki Pork Stir Fry
Weight Watcher's Points Plus: 10
  • 3 oz Pork Tenderloin, cooked
  • 3.5 oz carrots, sliced
  • 1 oz Snow Peas, chopped
  • 1.5 oz fresh pineapple, chopped
  • 1/2 cup of cooked Quinoa
  • 2 t Extra Virgin Olive Oil
  • 1/4 teriyaki sauce (we used New Season's Wok bar's teriyaki)
  • Sesame Seeds for garnish
Warm Wok or frying pan with medium high heat, add EVOO. Add carrots and peas saute until tender or to your liking (I like my carrots to be cooked but still crunchy). Then add pineapple and pork to heat through. Add the quinoa and teriyaki sauce and stir to combine.
Add to a bowl and enjoy!
